THE IMPERIAL CITY OF FEZ

In the northern part of Morocco is the imperial city of Fez, a true stronghold of the country’s culture and identity. Entering Fez (or Fes) you will feel like you have taken a dip in the past and you will breathe a medieval air: your senses will be lost in wonderful landscapes, particular sounds, rich scents and many colors. Fez is divided into the New City (Fès el-Jedid), that is the imperial city built starting from 1200, where the station, the Royal Palace and the Jewish quarter are located, and the Medina (Fès el-Bali), the oldest walled part of Fes, a real labyrinth of narrow streets, with markets of all kinds, from carpets to brass objects, ceramics to fabrics and leather. The city, founded as the capital of the Idrisid dynasty between 789 and 808, is home to the oldest university in the world and reached its heyday between 1200 and 1300 when it ousted Marrakech from the role of capital of Morocco.

TANJIA MARRAKCHIA

If you come to visit Marrakech, you cannot leave without having eaten the Tanjia! But what is tanjia? A long time ago, when I discovered the method and places of its cooking, I was in shock!
First of all, tanjia is a traditional dish from Marrakech and should not be confused with tajine, which is another traditional Moroccan dish in general. These two dishes have only one thing in common: they are named after the jars in which they are cooked! In fact, the tanjia is cooked in an earthenware container similar to a jar. There is a lot to say about this dish … it is a meat based dish (lamb, veal or chicken) with the addition of oil, garlic, saffron, cumin, salted lemon, turmeric water and the famous “smen”, a kind of salted butter … difficult to contextualize!

Goodmorning everyone! Today I share with you a habit of mine … I love drinking the water I pour into this jar of mine and do you know why? It purifies the water, keeps it fresh and gives it a good scent … difficult to explain in words but I assure you that once tasted you will not be able to do without it! Let me explain why it has this perfume and its history: in the regions of Marrakech and Tangier, there is a surprising handcrafted and traditional ceramic decorated with black geometric friezes. On cups, bowls and jugs of unglazed red earthenware, the potters apply the particular oil (“katran” in Arabic), using stamps, to create decorations that can be very complex. This “oil” is a vegetable tar extracted from juniper wood.
